What is IQF? How does IQF freezing work?

What are fruit purees used for?

Fruit purees are versatile ingredients used across the food and beverage industry. Scala Nuova's aseptic and conventional fruit purees offer long shelf life and consistent quality, making them ideal for large-scale production lines.

What is the difference between fruit puree and concentrate?

Fruit puree is the crushed and strained form of whole fruit, retaining its natural fiber content and body. Purees typically have a Brix value of 8-16. Fruit concentrate is produced by evaporating most of the water from puree, resulting in a much denser product with Brix values ranging from 40 to 70. Concentrates significantly reduce storage and shipping costs, as they are reconstituted with water before use to restore the original consistency.

As a general guideline: IQF fruits start from 1 pallet (approximately 1,000 kg), fruit purees from 1 metric ton, and concentrates from 200 kg drums. How is shipping and logistics handled?

Scala Nuova supports all major Incoterms delivery terms including CIF, CFR, FOB, and EXW. IQF frozen products are shipped in refrigerated containers maintaining -18°C throughout transit. Aseptic products can be transported at ambient temperature. We deliver via road freight to Europe and ocean freight to other continents. Every shipment includes real-time tracking and full documentation for customs clearance.

What packaging options are available?

For IQF fruits, we offer 10 kg polyethylene bags (in cartons), 500 g to 1 kg retail packs, and big bag options. Fruit purees are available in 200 kg aseptic drums, 1,000 kg IBC tanks, and 5-20 kg bag-in-box packaging. Concentrates come in standard 200 kg and 250 kg drums. We also provide private label services for customers who require custom branding and packaging solutions.

What is Brix value?

Brix (°Bx) is the unit of measurement for the dissolved sugar content in a liquid. In fruit juices and purees, it serves as a key indicator of quality and ripeness. For example, fresh orange juice measures approximately 11-12 Brix, while orange juice concentrate can reach 65 Brix. A higher Brix value indicates a more intense flavor and sweetness. Scala Nuova transparently specifies Brix values for all products in our technical data sheets.

What is aseptic processing?

Aseptic processing is a technique where food products are pasteurized at high temperature for a short time (HTST), then filled into sterile packaging under controlled conditions. This allows products to achieve a shelf life of 12-24 months at ambient temperature without the need for preservatives. Aseptic fruit purees and concentrates eliminate the need for cold chain logistics, significantly reducing storage and transportation costs. How does the nutritional value of IQF fruits compare to fresh?

IQF frozen fruits retain the vast majority of their vitamins, minerals, and antioxidants because they are processed at peak ripeness immediately after harvest. Research has shown that IQF fruits can have equal or even higher nutritional value compared to fresh fruits that have undergone extended transport and storage, during which natural nutrient degradation occurs. Additionally, IQF products offer year-round availability with consistent quality regardless of season.
