Frozen desserts judge a fruit ingredient on things no analysis sheet shows: how it freezes, how hard it gets, and whether it still tastes of fruit at minus eighteen degrees, where the palate is far less sensitive.
Fruit serving shells are whole fruits — orange, lemon, pineapple, coconut, melon and cocoa pod — hollowed out and frozen to become a natural, edible-adjacent presentation vessel rather than an industrial byproduct. Cold mutes taste. A puree that tastes balanced at room temperature can taste of nothing in a finished gelato — specify the intensity you need and trial at serving temperature, not on the bench.
Variegates must stay where they are placed without bleeding or refreezing into hard veins. Agree the viscosity at filling temperature and check the water activity of the sauce.
