Colour stability against acid and light

Fruit colours shift under the acid loads typical in confectionery and fade in clear packaging. Specify the colour value and ask for a light-exposure trial before committing to a clear film.

Pectin and sugar interaction

Natural pectin in the fruit interacts with added gelling systems. Declare the pectin level so your technologist can adjust the recipe rather than discover the problem in a production run.
